Dulce de Ayote - Sweet Crookneck Squash

Ingredients

1 large crookneck squash, cut into 4 X 5 inch pieces, seeded
1 1/3 lbs tapa de dulce, broken into small pieces or unrefined and unbleached whole sugar cane
10 cloves
8 cinnamon sticks
2 lime tree leaves
Peel of 1 orange, cut into 1 X 1 inch cubes

Directions

  1. Heat 3 cups water in a saucepan over medium high. Add tapa de dulce or whole sugar cane and bring it to a boil until tapa de dulce or whole sugar is completely dissolved. Add cloves, cinnamon, lime leaves, orange peels, and crookneck squash.
  2. Add water to cover two inches above mix level. Boil for 10 more minutes. Reduce heat to medium and cook until mix thickens, stirring occasionally with a wood spoon. Let it cool down.
  3. Remove cinnamon sticks, orange peel, and cloves. Serve cold.
