Papas con Chorizo - Potatoes with Chorizo Sausage

Savory sausage pan fried with cubed potatoes and spices.

Ingredients

  • 4 cups potatoes, peeled and cut into 1 inch square pieces

  • 1 lb chorizo sausage or Italian sausage

  • 1/2 teaspoon annatto (achiote) or paprika

  • 1/4 teaspoon salt

  • 1/4 teaspoon Worcestershire sauce


Directions

Skin chorizo or Italian sausage and cut into 2-inch pieces. Heat sausage in a saucepan over high medium for 15 minutes. Add potatoes, annatto or paprika, salt, and Worcestershire sauce. Stir occasionally. Cook for 45 minutes over low heat. Serve with rice.
